Fal Allen to Open New Brewpub in Seattle
August, 1999Fal Allen, ex-Pike head brewer, plans to open a new brewpub in Seattle with partner Chris O'Brien, former sous chef of Ray's Boathouse and executive chef of the Great Western Pacific Corporation. The location is the old Jules Maes Tavern in the Georgetown district in Seattle's south end, a popular watering hole that has operated coninuously since 1888 (Georgetown itself, home of the original Rainier Brewery, did not become part of Seattle until 1910.)
The partners plan to install an 8-barrel brewhouse and brew six of their own beers on premise. Bottled Belgian beers (in honor of the tavern's namesake Belgian owner) and some guest taps will also be available. Allen and O'Brien hope to take over the site by this coming October and release their first brew by the end of the year.v
